Here's a delicious and simple recipe for chicken spring rolls.
Ingredients:
For the filling:
- 250 g chicken breast, cooked and shredded
- 1 carrot, grated
- 100 g cabbage, finely chopped
- 1 red pepper, cut into julienne strips
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 50 g bean sprouts
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil (optional)
- Salt and pepper to taste
- 1 tablespoon vegetable oil
For the rolls:
- 12-15 sheets of Brie, rice paper or spring roll dough
- Frying oil
For the sauce:
- 50 ml soy sauce
- 3 tablespoons vinegar
- 1 tablespoon sugar
- 1 clove garlic, minced
- 1 chopped red chilli (optional)
Elaboration:
1. Prepare the stuffing:
- Heat a large frying pan over medium-high heat and add the vegetable oil.
- Sauté the onion and garlic until golden brown.
- Add the carrot, cabbage and red pepper. Cook for about 5 minutes, until the vegetables are tender.
- Stir in the shredded chicken and bean sprouts.
- Add the soy sauce and sesame oil (if using). Mix all ingredients well and cook for a few more minutes.
- Season with salt and pepper to taste. Remove from the heat and leave to cool.
2. Assemble the rolls:
- If using rice paper, soak each sheet in hot water for a few seconds until soft. If using spring roll dough, no need to soak.
- Place a small amount of filling in the centre of each leaf.
- Fold the sides towards the centre and then roll up tightly from the bottom to the top, forming a roll. Make sure they are well sealed.
3. Fry the rolls:
- Heat enough oil in a deep frying pan or deep fryer to 180°C.
- Fry the rolls in batches, making sure not to overcrowd the pan, until golden brown and crispy (approximately 3-4 minutes per side).
- Remove the rolls and place them on absorbent paper to remove excess oil.
Advice:
- You can use other types of vegetables for the filling, such as mushrooms, bean sprouts or peas.
- If you don't have rice paper, you can use wheat tortillas or wontons to make the rolls.
- For a healthier version, you can bake the spring rolls instead of frying them. Simply place them on a baking sheet lined with parchment paper and bake them at 200°C for 15-20 minutes, or until golden brown and crispy.
- Spring rolls are a versatile dish that can be enjoyed in many ways. You can serve them as a starter, appetizer or even as a main dish - experiment with different fillings and sauces to find your favourite combinations!
