Cauliflower Tacos with Avocado and Lime Salsa.

These cauliflower tacos are an explosion of fresh, spicy flavours. With a base of marinated and baked cauliflower, combined with shredded purple cabbage and an avocado-lime salsa, they're the perfect choice for a healthy and colourful lunch.

Ingredients (for 4 persons):

  • 1 medium cauliflower (cut into florets)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin powder
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 ripe avocado
  • Juice of 1 lime
  • 2 tablespoons plain yoghurt (optional)
  • 1 pickled red onion (for garnish)
  • Fresh coriander leaves (for decoration)
  • 1 cup shredded purple cabbage
  • Lime slices to accompany

Elaboration:

  1. Preparing the cauliflowerWash and cut the cauliflower into small florets. In a large bowl, mix the smoked paprika, cumin, garlic powder, olive oil, salt and pepper. Add the cauliflower florets and mix well so that they soak up the marinade.
  2. Bake the cauliflowerPreheat the oven to 200 °C and place the cauliflower on a baking tray lined with baking paper. Bake for 25 minutes or until golden brown and tender.
  3. Prepare the avocado-lime sauceIn a bowl, mash the avocado with a fork. Add the lime juice, natural yoghurt (if using), salt and pepper. Mix until you get a creamy texture.
  4. Fitting the cleatsWarm corn tortillas in a frying pan without oil. Place a base of shredded purple cabbage on each tortilla, add a portion of baked cauliflower, a spoonful of avocado-lime salsa, and garnish with pickled red onion and fresh coriander leaves.
  5. ServeServe freshly assembled tacos with lime wedges and more avocado salsa if desired.
Additional advice:
  • You can add roasted sweetcorn kernels for a textural contrast.
  • If you prefer a crunchier option, add strips of purple cabbage or grated carrot.

  • Serve the tacos with a fresh salad of green leaves and cherry tomatoes.
  • Garnish with a pinch of chilli powder for an extra spicy kick.
