Ingredients (for 4 persons):

  • 1 medium cauliflower (cut into florets)
  • 1 large egg
  • 50 g grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 large tomatoes, sliced
  • 150 g grated mozzarella cheese
  • 1 teaspoon dried basil (or a few fresh leaves for garnish)
  • 2 tablespoons natural tomato sauce
  • Extra virgin olive oil

Elaboration:

  1. Prepare the cauliflower doughPreheat the oven to 200 °C. Grate the cauliflower or process it in a food processor to a rice-like texture. Cook the cauliflower in the microwave for 5 minutes or until tender. Then place in a clean cloth and squeeze to remove excess water.
  2. Forming the baseIn a large bowl, mix the cooked cauliflower with the egg, Parmesan cheese, oregano, salt and pepper. Place the mixture on a baking tray lined with parchment paper and form a flat circle about 1 cm thick.
  3. Bake the baseBake the base for 20 minutes or until golden brown and firm to the touch.
  4. Add the ingredientsRemove the base from the oven and spread the tomato sauce over it. Sprinkle the grated mozzarella cheese and place the tomato slices on top. Add a pinch of dried basil and a drizzle of olive oil.
  5. Baking the pizzaReturn the pizza to the oven and bake for a further 10-15 minutes, or until the cheese is melted and bubbling.
  6. ServeGarnish with fresh basil leaves if desired and serve hot.
