Carrot cake.

A classic dessert that never goes out of style. Its combination of spicy flavours, moist texture and creamy topping makes it a favourite for any occasion. Here's an easy and delicious recipe for making your own carrot cake at home:

Ingredients:

For the cake:
  • 300 g grated carrots
  • 200 g wheat flour
  • 200 g brown sugar
  • 3 eggs
  • 100 ml sunflower oil
  • 2 tablespoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 pinch of salt
For coverage:
  • 250 g cream cheese (Philadelphia or mascarpone type)
  • 110 g icing sugar
  • 3-4 drops vanilla extract
  • 50 g butter at room temperature
  • Chopped walnuts for garnish (optional)

Elaboration:

1. Prepare the sponge cake:
  • Preheat the oven to 180°C (350°F).
  • In a large bowl, mix the grated carrots, flour, brown sugar, eggs, sunflower oil, baking powder, spices (cinnamon, ginger, nutmeg and ground cloves) and salt.
  • Mix well until a homogeneous dough is obtained.
  • Pour the batter into a greased and floured baking tin.
  • Bake for 45-50 minutes, or until a toothpick inserted in the centre of the cake comes out clean.
  • Allow the cake to cool completely before topping.
2. Prepare the topping:
  • In a large bowl, beat the cream cheese, icing sugar, vanilla and butter at room temperature until light and fluffy.
  • Cover the cooled sponge cake with the cream cheese cream.
  • Garnish with chopped nuts, if desired.
  • Refrigerate the cake for at least 2 hours before serving.
3. Advice:
  • For a more intense carrot flavour, you can use dark carrots or even add a little carrot puree to the dough.
  • You can add other spices to the dough, such as cardamom or allspice.
  • If you don't have nuts, you can decorate the cake with sultanas, grated coconut or grated chocolate.
  • The carrot cake keeps well in the refrigerator for 3-4 days.
5. Serve:
  • 4.1. Allow to cool slightly before serving.
  • 4.2. Serve the ratatouille tartlets with tuna hot or at room temperature.
