This caramel flan is one of those traditional desserts that never goes out of fashion. Its creamy texture and unmistakable caramel flavour make it the perfect finishing touch to any meal.
Ingredients (for 6 people):
- 5 large eggs
- 500 ml whole milk
- 150 g sugar
- 1 teaspoon vanilla essence
- 100 g sugar (for the caramel)
Elaboration:
- Prepare the caramel: In a frying pan over medium heat, melt the 100 g of sugar until it becomes liquid and turns a golden colour. Once ready, pour the caramel into the bottom of a flan mould and spread it evenly before it hardens.
- Prepare the flan mixture: Preheat the oven to 180 °C. In a bowl, beat the eggs together with the 150 g sugar until well blended. Add the vanilla essence and the milk, whisking gently until smooth. Strain this mixture.
- Assemble the flan: Pour the flan mixture over the caramel in the mould. Place the mould on a baking tray with hot water to bake the flan in a bain-marie.
- Bake: Bake for 50-60 minutes or until the flan is set. You can check for doneness by inserting a toothpick into the centre; if it comes out clean, the flan is ready.
- Cool and serve: Remove the mould from the oven and allow the flan to cool to room temperature. Then refrigerate for at least 4 hours before unmoulding. To unmould, run a knife around the edges and turn the mould out onto a plate - ready to enjoy!

- If you want a creamier flan, you can use evaporated milk instead of whole milk.
