Ingredients:
- 3 large eggs
- 100 g sugar
- 100 ml whole milk (at room temperature)
- 100 g butter (at room temperature)
- 1 teaspoon vanilla essence
- 250 g wheat flour
- 10 g dry baker's yeast
- 1 pinch of salt
- 150 g candied fruit (small cubes)
- 50 g slivered almonds
- Pearled sugar for decoration
Elaboration:
- Prepare the ingredients: In a bowl, beat the eggs together with the sugar until the mixture is smooth and frothy. Add the milk and butter a little at a time, mixing well until combined.
- Flavouring and dough base: Stir in the vanilla essence and mix. Sieve the flour and add it to the mixture together with the yeast and salt. Stir until you have a homogeneous dough.
- Adding the fruit: Add 100 g of candied fruit to the batter, mixing carefully so that the fruit is well distributed.
- Bread machine configuration: Lightly grease the Lidl bread baking tin with butter. Pour the batter into the baking tin and sprinkle the remaining candied fruit and slivered almonds on top.
- Programming: Select programme number 10 of the Lidl bread maker, the special programme for "Cake" or "Biscuit". Set the weight to 750 g and select the toasting level "light". The programme lasts approximately 1 hour and 50 minutes.
- Decoration during baking: After 40 minutes of baking, carefully open the lid of the bread maker and sprinkle the pearl sugar on top to give it a crunchy touch.
- Finish: At the end of the programme, remove the sponge cake from the bread machine and leave to cool on a wire rack before serving.
- Advice:
- If you prefer a more aromatic cake, you can add orange or lemon zest to the mixture.
- The butter should be at room temperature so that it mixes well with the other ingredients, ensuring a soft and fluffy texture.
- To prevent the candied fruit from sinking, lightly dredge it in flour before adding it to the batter.
