Butterfly anchovies are a crunchy and flavourful delight, reminiscent of the most traditional flavours of the sea. This recipe is perfect as an appetizer or as a starter for a family meal, accompanied by a few slices of lemon.
Ingredients (for 4 people):
- 500 g fresh anchovies
- Wheat flour (for breading)
- Salt to taste
- Extra virgin olive oil (for frying)
- Lemons (to serve)
- Fresh parsley (for garnish)

Elaboration:
- Clean the anchovies: Clean the anchovies by removing the head, the guts and the central bone, but without separating the loins completely, so that they remain open in the shape of a "butterfly". Wash them under cold water and dry them well with kitchen paper.
- Season: Place the cleaned anchovies on a plate and sprinkle salt to taste on both sides of the anchovies.
- Batter: Dredge the anchovies in flour, making sure they are well coated. Shake off excess flour before frying.
- Frying: Heat a frying pan with plenty of extra virgin olive oil. When the oil is very hot (around 180 ºC), fry the anchovies in batches to prevent the oil from losing temperature. Fry them for about 2-3 minutes or until golden brown and crispy. Remove them and place them on absorbent paper to remove excess oil.
- Serve: Serve the anchovies on a plate, garnished with lemon slices and fresh parsley.
Additional advice:
- Make sure the oil is very hot before frying the anchovies so that they are crispy and do not absorb too much oil.
- You can accompany the anchovies with a fresh salad or with chips for a more complete dish.
Suggested presentation:
- Place the anchovies on a large plate and serve with lemon wedges so that each guest can squeeze them over the fish. Garnish with some fresh parsley leaves for a touch of colour.
