Bran and seed bread.

This bran and seed bread is a healthy and delicious option, ideal to accompany your meals or to enjoy a hearty breakfast full of fibre and nutrients.

Ingredients (for a loaf of approx. 1 kg):

  • Ingredients (for skimmed milk):
    • 600 g skimmed milk
    • 2 eggs
    • 2 teaspoons salt
    • 2 tablespoons brewer's yeast
    • 2 tablespoons soy lecithin
    • 6 tablespoons of a seed mix (flax, sesame, chia, etc.), mostly flax and sesame seeds
    • 375 g oat bran
    • 75 g wheat bran
    • 190 g wheat gluten
    • 2 cubes of fresh yeast (about 50 g)
  • Ingredients (for almond milk):
    • 600 g almond milk (unsweetened)
    • All other ingredients remain the same.

Preparation (in a bread machine):

  1. Add the liquid ingredients:
    • In the bowl of the breadmaker, place the skimmed milk or almond milk (depending on the option chosen) and the 2 eggs.
  2. Add the dry ingredients:
    • Add the 2 teaspoons of salt, the 2 tablespoons of brewer's yeast, the 2 tablespoons of soy lecithin, and the seed mixture.
    • Then incorporate the oat bran, wheat bran, and wheat gluten.
  3. Stir in the yeast:
    • Crumble the 2 cubes of fresh yeast and place them on top of the dry ingredients, making sure that the yeast does not come into direct contact with the salt at the start.
  4. Select the programme:
    • In the Lidl bread maker, select the wholemeal programme, usually number 3 (in other brands of bread maker, the wholemeal programme).
    • Set the weight to 1.5 kg and choose the desired browning level (I leave it on medium).
  5. Let the baker do its job:
    • The programme will last about 3.5 hours. Once finished, leave the bread to rest in the machine for about 5 minutes (but no longer because it may overcook or soften with the moisture that may be produced when it cools down in the closed machine).
  6. Take out the bread:
    • Remove the bread from the pan, remove the cams or butterflies from underneath and place it on a wire rack to cool completely before slicing.
Suggestions for use:
  1. This bread is ideal for:
    • Toast and serve with avocado and a touch of sea salt.
    • Make healthy sandwiches with fresh ingredients such as ham, fresh cheese and vegetables.
    • Use it as a base for toast with extra virgin olive oil and tomato.
Advice on freezer storage:
  1. FreezingTo freeze bread, cut it into slices and place them in an airtight bag or wrap them individually in plastic wrap. This will prevent them from absorbing moisture or bad smells from the freezer.
  2. DurationFrozen bread keeps well for 2-3 months.
Defrosting mode:
  1. To thaw the bread, take it out of the freezer and let the slices thaw at room temperature for about 20-30 minutes.
  2. If you are in a hurry, you can toast the slices directly from frozen in the toaster. This will give them an extra crunchy touch.
