Braised pork leg with pineapple.

Here is the recipe for a delicious braised pork leg with pineapple, like the one shown in the picture, which I almost always make at Christmas, among other reasons because my little daughter loves it:

Ingredients:

  • 1 leg of pork (approximately 3-4 kg)
  • 1 can pineapple slices in syrup
  • 1 cup pineapple juice (you can use the syrup from the can)
  • 1 cup brown sugar
  • 1/2 cup honey
  • 1/2 cup dijon mustard
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • Whole cloves (optional, for decoration)
  • Salt and pepper to taste

Elaboration:

1. Prepare the pork leg:
  • Preheat the oven to 180°C.
  • Wash and dry the pork leg well.
  • Make shallow cuts in the leg, forming a diamond pattern, without cutting all the way through the flesh.
  • Season the leg with salt and pepper to taste.
2. Prepare the glaze:
  • In a small saucepan, mix pineapple juice, brown sugar, honey, dijon mustard, soy sauce, minced garlic and grated ginger.
  • Heat the mixture over medium heat, stirring constantly until the sugar dissolves and the mixture thickens slightly.
3. Braise the pork leg:
  • Place the pork leg on a baking tray.
  • Brush the pork leg with a generous layer of the prepared glaze.
  • Place the pineapple slices on the pork leg, securing them with toothpicks if necessary.
  • If you wish, you can stick cloves in the leg for extra flavour and decoration.
  • Pour the remaining glaze over the leg.
3. Bake:
  • Cover the tray with foil and bake the pork leg in the preheated oven for about 2 hours.
  • Remove the foil and continue baking for a further 1-1.5 hours, basting occasionally with the pan juices, until the leg is cooked through and golden brown.
  • The internal temperature of the meat must reach 70°C.
4. Serve:
  • Remove the pork leg from the oven and leave to rest for 10-15 minutes before slicing.
  • Serve the pork leg with the pineapple slices and the glaze on top.
Advice:
  • Cooking time: Cooking time may vary depending on the size of the pork leg. Be sure to use a cooking thermometer to check the internal temperature.
  • Accompaniments: This pineapple braised pork leg can be served with mashed potatoes, salads or roasted vegetables.
