The bonito with tomato is a classic Mediterranean dish, full of fresh and comforting flavours. Ideal to enjoy at any time of the year, this recipe combines the juiciness of tuna with a delicious homemade tomato sauce.
Ingredients (for 4 people):
- 600 g of fresh bonito, cut into cubes
- 1 kg ripe tomatoes (or 800 g canned crushed tomatoes)
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 50 ml of dry white wine
- 50 ml of extra virgin olive oil
- 1 bay leaf
- 1 teaspoon sugar (optional, to reduce the acidity of the tomato)
- Salt and pepper to taste
- Frying oil
- Flour to coat the tuna in batter
Elaboration:
- Wash and dry the bonito cubes with kitchen paper. Dry them well, season with salt and pepper and dredge lightly in flour. Fry the tacos in a frying pan with hot oil for 1-2 minutes on each side, just to seal them. Remove and set aside.
- In the same frying pan, skim off any excess oil, leaving only a couple of tablespoons. Sauté the chopped onion over medium heat until translucent.
- Add the chopped garlic and stir for a minute until it releases its aroma.
- Stir in the crushed tomato, white wine and bay leaf. Simmer for 20-25 minutes, stirring occasionally, until the sauce thickens. If using fresh tomatoes, peel and crush them before adding.
- Adjust the salt and add a teaspoon of sugar if the tomato is too acidic.
- Once the sauce is ready, place the bonito cubes in the pan, dip them in the sauce and cook everything together over a low heat for 5-7 minutes. Stir carefully to prevent the bonito from falling apart.
- Serve hot, accompanied by chips or white rice.
Suggested presentation:
- Serve the bonito with tomato on a large platter, garnished with a few fresh parsley leaves.
- Serve with fresh bread to make the most of every drop of the delicious sauce.
Additional advice:
- For a spicy touch, you can add a pinch of sweet or hot paprika to the fried onion.
- If you prefer a finer texture, pass the tomato sauce through a sieve or chinois before adding the bonito.
- This dish can also be prepared with fresh tuna if you can't find bonito.
