Bones of a saint.

Bones of saint are a traditional Spanish sweet that is usually eaten on special dates such as All Saints' Day. These filled marzipan delights have a unique texture and flavour that you will love.

Ingredients (for 12 bones of saint):

  • For the marzipan dough:
    • 200 g ground almonds
    • 200 g icing sugar
    • 50 ml water
  • For the yolk filling:
    • 4 egg yolks
    • 100 g sugar
    • 50 ml water

Elaboration:

  1. Prepare the marzipan dough: In a saucepan, heat the water with the icing sugar until a light syrup forms. Then add the ground almonds and mix well until a homogeneous mass is formed. Remove from the heat and leave to cool slightly.
  2. Form the saint's bones: Roll out the marzipan dough on a smooth surface sprinkled with icing sugar. With a rolling pin, flatten the dough to a thickness of 3-4 mm. Cut rectangles of approximately 5 x 4 cm. Roll each rectangle into a cylinder to form the "bone". You can use a toothpick to give each cylinder a ridged shape.
  3. Prepare the egg yolk filling: In a saucepan, heat the water with the sugar until a thin syrup forms (about 110ºC). Add the previously beaten egg yolks, stirring continuously until thickened. Leave to cool completely before using.
  4. Fill the saint's bones: With the help of a piping bag, fill each marzipan cylinder with the dulce de yema.
