This dish of battered hake served with squid in its own ink is a classic and delicious combination. The hake is crispy on the outside and juicy on the inside, while the squid adds a seafoody, flavourful touch.
Ingredients (for 4 people):
- 4 hake fillets (preferably thick loins)
- 250 g fresh squid
- 1 onion
- 2 cloves garlic
- 100 ml white wine
- 1 sachet squid ink
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 eggs
- 100 g flour
- Olive oil for frying
- Salt to taste
Elaboration:
- Preparation of the squid in its ink:
- Clean the squid well and cut into small pieces.
- Finely chop the onion and garlic.
- In a large frying pan, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and sauté until golden brown and tender.
- Add the squid and cook for 5 minutes, stirring occasionally.
- Pour in the white wine and allow the alcohol to evaporate for a couple of minutes.
- Add the squid ink dissolved in a little hot water. Simmer for about 15 minutes, or until the squid is tender. Season to taste with salt and pepper.
- Preparation of the battered hake:
- Season the hake fillets with salt to taste.
- In a deep plate, beat the eggs and in another plate place the flour.
- Dredge the hake fillets first in the flour and then in the beaten egg, making sure they are well coated.
- Heat plenty of olive oil in a large frying pan over medium-high heat. When hot, fry the hake fillets for 3-4 minutes on each side, or until golden brown and crispy.
- Place the fried fillets on a plate with absorbent paper to remove excess oil.

Additional advice:
- You can add a few drops of lemon juice on top of the hake before serving to give it a fresh and tangy touch.
- If you prefer a lighter version, instead of frying the hake, you can bake it in the oven with a little olive oil.
- Accompany the dish with some white rice to balance the flavours and make the meal more complete.
