Discover the homemade flavour of this delicious banana sponge cake, fluffy and with an irresistible sweet touch. Ideal for sharing on any special occasion or enjoying with a cup of coffee.
Ingredients:
- 250 grams of ripe bananas.
- 200 grams of sugar.
- 4 eggs.
- 1 pinch of salt.
- 70 grams of olive oil (0.4º).
- 200 grams of flour.
- 4 teaspoons baking powder (Royal).
- Icing sugar for sprinkling.
Elaboration:
- Mash the bananasIn a large bowl, place the peeled ripe bananas and mash them well with a blender or masher to a smooth puree.
- Add sugar and saltAdd the sugar and the pinch of salt to the mashed banana and mix until well combined.
- Add the eggsAdd the eggs one at a time, beating with an electric or hand mixer after each addition, until the mixture is fluffy and well blended.
- Incorporate the oilPour in the olive oil little by little while continuing to whisk on low speed until everything is well blended.
- Mix the dry ingredientsIn another bowl, sift the flour together with the baking powder. Then add this dry mixture to the bowl with the wet ingredients in two or three parts, mixing gently with a spatula or wooden spoon until there are no lumps. Do not overmix to prevent the cake from becoming stiff.
- BakePreheat the oven to 175ºC-180ºC. Grease and flour a cake tin. Pour the mixture into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted in the centre comes out clean.
- Leave to cool and decorateWhen the cake is ready, take it out of the oven and leave it to cool in the tin for about 10 minutes before unmoulding. Sprinkle with icing sugar before serving.
