Baked apple blossom with cream.

Discover the exquisiteness of baked apple blossoms, combining thin slices of apple with a soft pastry cream, all wrapped in a crispy puff pastry. This delicate presentation not only delights the eye, but also the palate, with a hint of cinnamon to enhance the flavour. Perfect for any occasion, these flowers are a real culinary delight.

Ingredients:

  • 2 large apples (preferably red or green)
  • Juice of half a lemon
  • 1 sheet of puff pastry dough
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon powder
  • 1 egg (to paint the puff pastry)
  • Parchment paper (baking paper will do)
Ingredients for the Crème Pâtissière:
  • 500 ml milk
  • 4 egg yolks
  • 100 grams of sugar
  • 40 grams of cornstarch
  • 1 vanilla pod

Elaboration:

1. Preparation of the apples:
  • Wash the apples well and cut them in half, removing the core.
  • Cut the apples into thin slices.
  • Place the apple slices in a bowl with water and lemon juice to prevent oxidation.
  • Put the bowl with the apples in the microwave for about 3-4 minutes to soften them a little. You can also do this step in a pan of hot water for a few minutes.
2. Preparation of the puff pastry:
  • Roll out the puff pastry on a floured surface and cut strips about 5 cm wide.
  • Sprinkle the strips with sugar and cinnamon to taste.
3. Preparation of the pastry cream:
  • In a saucepan, heat the milk with the vanilla pod split lengthwise.
  • In a separate bowl, mix the egg yolks with the sugar and cornflour until smooth.
  • Once the milk is hot, remove the vanilla pod and pour some of the hot milk over the egg yolk mixture, whisking constantly.
  • Pour the egg yolk mixture back into the saucepan with the rest of the milk and cook over medium heat, stirring constantly, until the cream thickens.
  • Remove from the heat and leave to cool.
4. Assembly of the apple blossoms:
  • Spread a layer of pastry cream on each strip of puff pastry.
  • Lay the apple slices along the length of each strip, overlapping slightly and leaving the skin side out.
  • Fold the bottom of the puff pastry strip upwards, partially covering the apples.
  • Carefully roll each strip into a rose.
  • Place the roses in muffin tins that have been greased or lined with parchment paper.
5. Baking:
  • Preheat the oven to 375°F (190°C).
  • Paint the roses with beaten egg.
  • Bake for about 25-30 minutes, or until the puff pastry is golden brown and crisp.
5. Completion:
  • Remove the apple blossoms from the oven and leave to cool slightly before serving.
  • You can sprinkle a little more sugar and cinnamon before serving.
