This dish of artichokes with cockles is the perfect union between land and sea, ideal for those looking for a light, healthy and flavourful recipe. With the option of preparing it in the traditional way or in the Thermomix.
Ingredients:
- 8 fresh artichokes (or 400 g of canned artichokes)
- 500 g fresh cockles
- 1 clove of garlic
- 1 tablespoon flour
- 100 ml white wine
- 200 ml fish stock (or water)
- Extra virgin olive oil
- Fresh chopped parsley
- Salt and pepper to taste
- 1 lemon (to prevent the artichokes from oxidising)
Elaboration:
Traditional option:
- Preparing the cocklesPlace the cockles in salted water for about 30 minutes to loosen the sand. Rinse them well before cooking.
- Clean and cook the artichokesIf using fresh artichokes, remove the tougher outer leaves and cut off the tips. Cut them into quarters and place them in a bowl with water and lemon juice to prevent them from oxidising. Then boil in salted water for about 15-20 minutes or until tender. If using canned artichokes, simply drain and set aside.
- Cooking cocklesIn a large frying pan, heat a little olive oil and add the chopped garlic. Cook for a few seconds and add the cockles. Pour in the white wine and cover the pan. Cook for about 3-4 minutes, until the cockles open. Remove and set aside.
- Prepare the sauceIn the same pan, add the flour and cook for one minute, stirring to prevent it from burning. Then add the fish stock little by little, stirring constantly so that no lumps form. Cook the sauce for a few minutes until it thickens slightly.
- Add the artichokes and cockles.Add the cooked artichokes and cockles to the pan with the sauce. Cook for a further 2-3 minutes so that the flavours blend well. Add salt and pepper to taste.
- ServeSprinkle fresh chopped parsley on top and serve hot.
Additional advice:
- If you prefer, you can add a roasted pepper as a side dish, as shown in one of the pictures.
- For a more intense touch, you can add a little chilli or paprika to the sauce.

- Place the cockles in the Varoma dish and set aside.
- In the glass, add the chopped garlic and 30 g of olive oil. Sauté 3 minutes / Varoma / speed 1.
- Add the white wine and cook 2 minutes / Varoma / speed 1 without the cup.
- Place the Varoma with the cockles on the lid and programme 8 minutes / Varoma / speed 1 so that they cook with the steam from the wine. Remove the Varoma and set the cockles aside.
- Cooking artichokes in the Thermomix:
- Add the flour to the mixing bowl with the fried garlic and programme 1 minute / 100°C / speed 1.
- Add the fish stock and cook 7 minutes / 100°C / speed 1.
- Add the artichokes to the mixing bowl and programme 5 minutes / 100°C / reverse rotation / spoon speed.
- Join the cocklesPour the artichokes with the sauce into a bowl, add the cockles and mix gently. Add chopped fresh parsley.
- ServeServe hot and garnish with more parsley if desired.
Suggested presentation:
- Serve the artichokes with cockles in a deep plate, accompanied by a slice of crusty bread to dip in the sauce. This dish is perfect as a starter or light main course.
