Apple pie.

The apple pie with shortcrust pastry is a delicious variation of the classic apple pie. The shortcrust pastry gives it a crunchy y buttery which contrasts perfectly with the softness of the apples. This recipe is easy to follow y requires few ingredientsmaking it an ideal choice for any occasion.

Ingredients:

For the shortcrust pastry:
  • 250 g wheat flour
  • 125 g cold butter, cut into cubes
  • 75 g icing sugar
  • 1 egg
  • 1 pinch of salt
For the apple filling:
  • 4 large apples
  • 80 g sugar
  • 20 g butter
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Juice of 1 lemon
To decorate:
  • 1 beaten egg
  • Icing sugar

Elaboration:

Prepare the shortcrust pastry:
  • In a large bowl, mix the flour, icing sugar and salt.
  • Add the cold butter cut into cubes and mix with your fingertips until the mixture resembles coarse crumbs.
  • Stir in the egg and mix until a homogeneous dough forms.
  • Wrap the dough in cling film and refrigerate for 30 minutes.
2. Prepare the filling:
  • Peel the apples, cut them into thin slices and sprinkle them with the lemon juice to prevent them from oxidising.
  • In a frying pan, melt the butter over medium heat.
  • Add the apples, sugar, cinnamon, nutmeg and ginger. Cook for 10-15 minutes, stirring occasionally, until the apples are soft.
  • Remove from the heat and leave to cool.
3 Assemble the cake:
  • Preheat the oven to 180°C.
  • Grease a 23 cm cake tin.
  • Roll out the dough on a floured surface until it is about 3 mm thick.
  • Line the tin with the dough, pressing the edges well.
  • Pour the apple filling over the dough.
  • Fold the edges of the dough over the filling, creating a decorative border.
  • Brush the surface of the cake with the beaten egg.
4. Bake the cake:
  • Bake the tart for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
  • Remove from the oven and leave to cool completely on a wire rack before serving.
5. Decorate and enjoy:
  • Sprinkle the cake with icing sugar before serving.
  • Enjoy your delicious homemade apple pie!

Advice:

  • You can use apples of different varieties to give your tart a more complex flavour.
  • If you like the cinnamon flavour, you can add more to taste.
  • For a crispier cake, you can sprinkle the dough with sugar before baking.
  • You can serve the cake with vanilla ice cream, whipped cream or Greek yoghurt.
