Ingredients:
For the shortcrust pastry:
- 250 g wheat flour
- 125 g cold butter, cut into cubes
- 75 g icing sugar
- 1 egg
- 1 pinch of salt
For the apple filling:
- 4 large apples
- 80 g sugar
- 20 g butter
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- Juice of 1 lemon
To decorate:
- 1 beaten egg
- Icing sugar
Elaboration:
Prepare the shortcrust pastry:
- In a large bowl, mix the flour, icing sugar and salt.
- Add the cold butter cut into cubes and mix with your fingertips until the mixture resembles coarse crumbs.
- Stir in the egg and mix until a homogeneous dough forms.
- Wrap the dough in cling film and refrigerate for 30 minutes.
2. Prepare the filling:
- Peel the apples, cut them into thin slices and sprinkle them with the lemon juice to prevent them from oxidising.
- In a frying pan, melt the butter over medium heat.
- Add the apples, sugar, cinnamon, nutmeg and ginger. Cook for 10-15 minutes, stirring occasionally, until the apples are soft.
- Remove from the heat and leave to cool.
3 Assemble the cake:
- Preheat the oven to 180°C.
- Grease a 23 cm cake tin.
- Roll out the dough on a floured surface until it is about 3 mm thick.
- Line the tin with the dough, pressing the edges well.
- Pour the apple filling over the dough.
- Fold the edges of the dough over the filling, creating a decorative border.
- Brush the surface of the cake with the beaten egg.
4. Bake the cake:
- Bake the tart for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
- Remove from the oven and leave to cool completely on a wire rack before serving.
5. Decorate and enjoy:
- Sprinkle the cake with icing sugar before serving.
