Migas del pastor is a traditional dish of Spanish cuisine, especially popular in the regions of Castilla-La Mancha, Extremadura and Andalusia. Elaboration:

- Fry the sausages: In the same oil, add the bacon or bacon pieces and fry until crispy. Then add the ham and the sliced chorizo and fry until it releases its juices and takes colour. Remove the sausages and set aside.
- Cook the crumbs: Add the breadcrumbs to the pan with the oil and stir constantly to infuse the breadcrumbs with the flavours. Cook over medium-low heat for about 20-25 minutes, stirring frequently until the crumbs are loose and golden brown.
- Add the paprika: Add the sweet paprika and mix well to give the crumbs their characteristic colour and flavour.
- Fry the eggs: In a separate pan, fry the eggs in a little olive oil until the whites are cooked and the yolks are runny.
- Mount the plate: Serve the crumbs piping hot on individual plates or in an earthenware dish, place a fried egg on top and serve with the reserved sausages.
Suggested presentation:
- Accompany with grapes, orange or even some melon, following the tradition of some regions.
- Serve with fried peppers or a light salad to balance the dish.
