Ingredients (for 4 persons):
- 4 eggs
- 200 g stale bread, in small pieces
- 1 onion, chopped
- 1 green pepper, chopped
- 1 carrot, grated
- 100 g courgette, diced
- 100 ml milk
- Olive oil
- Salt and pepper to taste
- Ingredients for the tomato and pepper sauce:
- 2 large, ripe, peeled and chopped tomatoes (or 200 g canned crushed tomatoes)
- 1/2 red pepper, thinly sliced
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 teaspoon sweet paprika
- 1/2 teaspoon sugar (optional, to correct the acidity of the tomato)
- Olive oil
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Elaboration:
- Preparation of the tortilla:
- Prepare the bread: Place the pieces of stale bread in a bowl and cover them with the milk. Leave to stand for about 10 minutes to soften.
- Sauté the vegetables: In a large frying pan, heat a drizzle of olive oil and sauté the onion, green pepper, carrot and courgette until tender. Season to taste with salt and pepper and set aside.
- Mix the ingredients: In a large bowl, beat the eggs and add the soaked bread, mixing well. Stir in the fried vegetables and mix until well combined.

- Sauté the ingredients: In a frying pan with a drizzle of olive oil, sauté the onion and garlic over medium heat until golden brown and fragrant.
- Add the pepper: Stir in the red pepper strips and cook for 5 minutes, stirring occasionally.
- Add the tomato: Add the chopped or crushed tomato, sweet paprika, and simmer for 10-15 minutes, stirring occasionally. Adjust the acidity with a little sugar if necessary.
- Season with salt and pepper: Season to taste with salt and pepper. If you prefer a homogeneous texture, you can blend the sauce with a hand blender.
- Serve: Pour the hot sauce over the stale bread and vegetable tortilla or serve on the side for each diner to serve as desired. Garnish with fresh parsley or basil.
