Ingredients (for 4 persons):
- For the repapalos:
- 150 g stale bread
- 200 ml warm milk or broth (chicken or vegetable)
- 2 eggs
- 1 clove garlic, minced
- Chopped fresh parsley (to taste)

- Mild olive oil for frying
- For the sauce:
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 1 small carrot, grated
- 150 ml white wine
- 400 ml chicken or vegetable stock
- 1 tablespoon flour
- 1 bay leaf
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Elaboration:
- Cut the bread into pieces and cover with the warm milk or broth. Leave to soften for 10 minutes.
- Add the beaten eggs, chopped garlic, parsley, salt and pepper to the hydrated bread. Mix well until a uniform dough is formed. If it is too wet, add a little breadcrumbs or flour.
- Form the dough into small balls or discs. Fry in hot oil until golden brown and crispy. Set aside on absorbent paper.
- In a large pan, heat a little oil and sauté the onion, garlic and carrot until soft.
- Add the flour and stir well to toast it lightly.
- Add the white wine and cook for a few minutes to allow the alcohol to evaporate. Then add the stock and bay leaf. Cook over a medium heat for 10 minutes, stirring occasionally, until the sauce thickens slightly.
- Blend the sauce if you prefer a more homogeneous texture, or leave it as it is if you like it chunky.
- Place the cabbage in the pan with the sauce. Simmer for 5-10 minutes to allow them to soak up the flavour.
- Garnish with chopped fresh parsley and serve hot. Serve with a little bread or mashed potatoes.

- For an extra kick, add a little nutmeg or sweet paprika to the sauce.
