Repápalos en Salsa.

These repapalos in sauce are a tasty and attractive version of the traditional recipe. Covered with a delicious sauce, they are perfect to serve as a main dish, accompanied by a side of bread to make the most of every drop.

Ingredients (for 4 persons):

  • For the repapalos:
    • 150 g stale bread
    • 200 ml warm milk or broth (chicken or vegetable)
    • 2 eggs
    • 1 clove garlic, minced
    • Chopped fresh parsley (to taste)
    • Salt and pepper to taste
    • Mild olive oil for frying
  • For the sauce:
    • 1 medium onion, finely chopped
    • 1 clove garlic, minced
    • 1 small carrot, grated
    • 150 ml white wine
    • 400 ml chicken or vegetable stock
    • 1 tablespoon flour
    • 1 bay leaf
    • Salt and pepper to taste
    • Fresh chopped parsley for garnish

Elaboration:

  1. Cut the bread into pieces and cover with the warm milk or broth. Leave to soften for 10 minutes.
  2. Add the beaten eggs, chopped garlic, parsley, salt and pepper to the hydrated bread. Mix well until a uniform dough is formed. If it is too wet, add a little breadcrumbs or flour.
  3. Form the dough into small balls or discs. Fry in hot oil until golden brown and crispy. Set aside on absorbent paper.
  4. In a large pan, heat a little oil and sauté the onion, garlic and carrot until soft.
  5. Add the flour and stir well to toast it lightly.
  6. Add the white wine and cook for a few minutes to allow the alcohol to evaporate. Then add the stock and bay leaf. Cook over a medium heat for 10 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Blend the sauce if you prefer a more homogeneous texture, or leave it as it is if you like it chunky.
  8. Place the cabbage in the pan with the sauce. Simmer for 5-10 minutes to allow them to soak up the flavour.
  9. Garnish with chopped fresh parsley and serve hot. Serve with a little bread or mashed potatoes.

  • This dish is excellent with a side of white rice or a side of steamed vegetables.
  • For an extra kick, add a little nutmeg or sweet paprika to the sauce.
