- Cooks the fettuccine in a large pot of boiling salted water, following the instructions on the packet, until al dente. Drain the pasta and set aside.
- While the pasta is cooking, melt the butter in a large frying pan over medium heat. Add the prawns and minced garlic, and cook for a few minutes until the prawns are pink.
- Remove the prawns from the pan and set aside.
- In the same pan, pour the white wine and allow it to reduce by half, scraping the bottom of the pan to pick up the flavours.
- Add the heavy cream and fish stock to the pan, and bring the mixture to a gentle boil. Simmer for a few minutes until the sauce thickens slightly.
- Add the prawns back to the pan and stir to coat with the sauce.
- Add the cooked pasta to the pan with the sauce and prawns, and mix well so that the pasta soaks up the sauce.
- Season with salt and pepper to taste, and sprinkle grated Parmesan cheese on top.
- Serve hot, sprinkled with fresh chopped parsley for garnish.
