Fettuccine with prawns

Here is a simple recipe for pasta with seafood:

Ingredients:

  • - 400g large prawns, peeled and deveined
  • - 2 cloves garlic, minced
  • - 1/4 cup (60ml) dry white wine
  • - 1 cup (240ml) liquid cream
  • - 1/2 cup (120ml) fish stock
  • - 1/4 cup (60g) butter
  • - 1/4 cup (30g) grated Parmesan cheese
  • - Salt and black pepper to taste
  • - Fresh chopped parsley for garnish

  3. Cooks the fettuccine in a large pot of boiling salted water, following the instructions on the packet, until al dente. Drain the pasta and set aside.
  4. While the pasta is cooking, melt the butter in a large frying pan over medium heat. Add the prawns and minced garlic, and cook for a few minutes until the prawns are pink.
  5. Remove the prawns from the pan and set aside.
  6. In the same pan, pour the white wine and allow it to reduce by half, scraping the bottom of the pan to pick up the flavours.
  7. Add the heavy cream and fish stock to the pan, and bring the mixture to a gentle boil. Simmer for a few minutes until the sauce thickens slightly.
  8. Add the prawns back to the pan and stir to coat with the sauce.
  9. Add the cooked pasta to the pan with the sauce and prawns, and mix well so that the pasta soaks up the sauce.
  10. Season with salt and pepper to taste, and sprinkle grated Parmesan cheese on top.
  11. Serve hot, sprinkled with fresh chopped parsley for garnish.
